Super Bowl Food: Bosco Sticks!

Super Bowl XLVIII is this weekend and it is time to gather the snacks! Our office has been participating in a Corporate Wellness Challenge and one of the challenges was to try a healthy recipe. One of our employees was gracious enough to share her healthier version of the family favorite: the Bosco Stick.

Healthy Bosco Sticks

1 tsp white sugar

1 ½ Cups warm water (110 degrees F/45 degrees C)

1 Tbl active dry yeast

1 Tbl Olive Oil

1 tsp salt

18 Mozzarella/String Cheese Sticks

1 stick Butter

1 tsp Garlic Salt

1 tsp Tone’s Garlic Herb Seasoning

1 tsp salt

2 cups whole wheat flour

1 ½ Cups finely ground Oatmeal into flour

  1. Preheat oven to 450 degrees. Proof yeast in sugar and warm water (about 10 minute it should be foamy on top) Mix olive oil and salt into yeast mixture. Then mix in Wheat flour and 1 cup of the ground Oatmeal flour. Mix until all flour is absorbed and dough is smooth. Coat dough with a sprinkle of olive oil and let set for 1 hour in a warm (not hot) place. It should rise and almost double in size.
  2. Melt Butter in a microwave safe bowl, add garlic salt and garlic herb seasoning to butter
  3. Cut all the Mozzarella/String cheese sticks in half. Spray nonstick cooking spray on a cookie sheet.
  4. Put remaining flour on counter and coat hands before making each stick
  5. Pinch off about ¼ c size ball of dough and form around a cheese stick, carefully pinching together all the edges. Roll in butter mixture and place on a prepared cookie sheet. Repeat until done.
  6. Bake at 450 degrees for about 10-15 minutes or until a nice golden brown. These do reheat well!

Easy version – not so healthy

Buy a package of pizza crust mix and follow directions (usually add water, mix and let set for 10 minutes). Skip to step 2 and finish!
